Rum Collins Recipe
The Rum Collins is a Caribbean variation of the classic Tom Collins cocktail. Made from light rum, lime juice, simple syrup, club soda, lemon and cherry, and served over ice in a Collins glass.

- Shake rum, lime juice and sugar with ice in a cocktail shaker.
- Strain into a Collins glass full of ice and fill with club soda.
- Stir gently and garnish with a maraschino cherry and a lemon slice.
